Every Christmas my daughter and I make this Rocky Road recipe. It's so quick and simple and being entirely white makes it Christmassy.
900g white chocolate, chopped
1/2 cup shredded coconut
1 cup macadamia nuts, halved
250grams white marshmallow, halved (just eat the pink ones while cooking!)
1. Place the chocolate in a heatproof bowl over simmering water (use a metal spoon, NOT wooden) and stir until melted and smooth.
2. Remove from heat.
3. Add coconut
4. Add macadamias
5. Add marshmallows
6. Stir to combine
7. Pour the mixture into a 28 cm x 18 cm tin lined with baking paper.
9. Remove from the tin and cut into 5 cm squares to serve.
